“Chinese Buffet” Green Beans

Ingredients

 

  • 1 tablespoon oil, peanut or sesame
  • 2 cloves garlic, thinly sliced
  • 1 pound fresh green beans, trimmed
  • 1 tablespoon white sugar
  • 2 tablespoons oyster sauce
  • 2 teaspoons soy sauce

Directions

  1. Heat peanut oil in a wok or large skillet over medium-high heat. Stir in the garlic, and cook until the edges begin to brown, about 20 seconds. Add the green beans; cook and stir until the green beans begin to soften, about 5 minutes. Stir in the sugar, oyster sauce, and soy sauce. Continue cooking and stirring for several minutes until the beans have attained the desired degree of tenderness.

Green Bean and Asparagus Salad

Ingredients

  • 1 pound fresh green beans, trimmed and cut into bite-size pieces
  • 1 tablespoon extra-virgin olive oil
  • 1 pound fresh asparagus, trimmed and cut into bite-size pieces
  • 1 tablespoon extra-virgin olive oil
  • 1/2 red onion, chopped
  • 2 cups cherry tomatoes, halved
  • 1/4 cup chopped fresh parsley
  • kosher salt to taste
  • ground black pepper to taste

Directions

  1. Preheat an oven to 400 degrees F (200 degrees C).
  2. Toss green bean pieces and 1 tablespoon olive oil in a bowl until the green beans are evenly coated; spread onto a baking sheet.
  3. Roast green beans in preheated oven until tender, about 10 minutes.
  4. Toss asparagus pieces and 1 tablespoon oil in a bowl until the asparagus is evenly coated; spread onto the baking sheet with the partially roasted green beans.
  5. Continue roasting the green bean and asparagus mixture until tender, 10 to 12 minutes.
  6. Toss the roasted green beans and asparagus with red onion, cherry tomatoes, and parsley in a large bowl; season with kosher salt and black pepper.

Sweet Italian Green Beans

Ingredients

  • 4 slices bacon
  • 3 green onions, chopped
  • 2 cloves garlic, chopped
  • 2 (15 ounce) cans green beans, drained
  • 1 (14.5 ounce) can Italian-style diced tomatoes
  • 1 pinch dried basil
  • 1 pinch dried oregano
  • 1/4 cup brown sugar

Directions

  1. Cook bacon in a skillet over medium heat until crisp. Remove from the pan to drain on paper towels. Reserve the grease in the skillet and add the onions; cook and stir over medium heat until softened. Add garlic and cook for about 30 seconds more. Remove from the heat.
  2. In a saucepan, combine the green beans, tomatoes, basil, oregano and brown sugar. Crumble in the bacon and add the onion and garlic from the skillet. Warm over medium heat until heated through, 5 to 10 minutes.
